Pizza is the best known Italian dish in the world also for the tricolor which explodes in all its beauty on the surface, with the white of the mozzarella joining with the red of the tomato and the green of the basil.

The latter color is actually represented by another of the fundamental ingredients, namely extra virgin olive oil, the use of which, however, does not make all pizza makers agree, on the contrary: there are who use it only as an external condiment, who don’t use it at all, those who prefer other options to extra virgin olive oil.

It is certainly an incredibly eclectic ally in the kitchen.
